Abstract

Food sampling procedures are an important element of ensuring the reliability of laboratory test results. In particular, it must be ensured that the laboratory sample sent for microbiological testing reflects the whole batch of food with its characteristics. With this in mind, some currently applicable EU legal requirements, international, European, domestic and private standards are described and recommended to be used in practice for official and internal control purposes.
